Dandies- Marshmallow Ginger Truffles


I love Dandies. I have said it on here before and I am certain that I will post about them again in the future. These were sent to me from Chicago SoyDairy to use for some new ideas. I already loved them before they were sent to me and that's that.

So, I have a head full of ideas for these little gems but this is the first one out. The bakery has been busy but I managed to roll these out a few days ago. They are pretty simple to make if you already have some ganache in the refrigerator. Am I the only one who has ganache in the refrigerator? The biggest problem that I have is hot hands and melting chocolate. The solution is putting some cocoa powder on my gloves and working as fast as possible. The cocoa powder helps to keep the ganache from sticking to the gloves. This is what I did. Spoon out a bit of ganache, wrap it around one marshmallow and make a nice smooth ball. Then roll it in powdered ginger. They needed to be rolled in ginger a few times to get a nice coating. I think these turned out to be amazing. Great taste and textures, deep rich chocolate, fluff of marshmallow and a good bit of bite at the end from the ginger. Eating just one was not an option.

Revised Mozzarella Teese

It seems that the amazing vegan company Chicago SoyDairy is always hard at work with their products. I was lucky enough to receive a sneak preview of a revised recipe Mozzarella Teese to test. It is supposed to have a better taste and texture than the already good Teese Mozzarella style. Grilled cheese and pizza were the obvious testers for it. The results were pretty impressive and it did live up to the better taste and texture expectations. The Teese melted great and had a smooth creamy texture without any strange aftertaste.

Grilled Teese on Cranberry Walnut. Oh Yeah! This was the only bread I had on hand to use and I'm glad I did.



BBQ Spinach, Mushroom and Mozzarelle style Teese Pizza. Yum! Don't be afraid. Next time around I would definitely crank the oven up to 500-550. This was the suggested temperature for use of the Teese on pizza. I will admit that I was afraid to bake it at that temperature, my mistake!

Hot Chocolate Cookies

So, a long time ago I got a box of awesomeness from Chicago SoyDairy.

There is always something going on around here and I'm finally posting about it.

I am a big fan of Teese but the Dandies were the first to be opened. It's been a really long time since I've had a marshmallow. I have found a few marshmallow "like" desserts but these are the real deal when it comes to vegan marshmallows. I regularly bake Hot Chocolate Cookies for our co-op. They were the first thing to come to mind after eating a few Dandies. I chopped up the Dandies into smaller pieces to avoid a marshmallow explosion and to match the size of the cookie. These cookies have a deep rich chocolate taste followed by sweet and smoky from the sugar, cinnamon and chipotle pepper. Add to that the fluff and chew of the marshmallow pieces and you have the perfect addition to the already great Hot Chocolate Cookie. Thanks go out to Chicago SoyDairy. I'll be baking these on a regular basis.

The Teese Vegan Cheese Challenge -- Mozzarella!

This is part 2 of my Chicago SoyDairy Teese Vegan Cheese Challenge! This time it's mozzarella style Teese. I decided to go with pepperoni rolls. If you have not heard of these they are a regional favorite here in wild and wonderful West Virginia. I had never heard of these before meeting the one and only Lemon Cadet.

I did not invent these but simply upgraded them to more of a gourmet vegan version. Not sure if you can say that about a pepperoni roll. Vegan pepperoni, fresh spinach, roasted garlic and Mozzarella style Teese rolled up inside pizza dough. You can see them inside of the oven. I did some with Teese on top and a few with garlic . The Teese melted down nicely but my garlic burned up. Next time I will use a little more Teese inside. These were delicious!

The Teese Vegan Cheese Challenge!


Chicago SoyDairy sent me some Cheddar style Vegan Teese to use for their Teese Vegan Cheese Challenge! The first thing that came to mind was Smoky Cheddar Biscuits. So I shredded some, mixed it into my drop biscuit batter along with "bac'un" bits and topped the biscuits with paprika.

Fresh out of the oven and they look tasty.

You can see the melted Teese inside of the biscuit. I love biscuits but these went to a new level. The Teese added a creamy texture to the already savory biscuit.

They were so delicious! Check back in a few days to see what I did with the Mozzarella Style Teese.
