Mini Carrot Cake

It's Friday and the cake this week is Carrot Cake. These are mini bundt cakes and they are covered with a cream cheese icing. I like the mini cakes because it's not a just a slice of a cake. It's a perfect little satisfying cake. You can pick one up if you stop by Slight Indulgence.

Apple Blueberry Pie

Sunday morning I made Apple Blueberry Pie. Actually they were apple blueberry with a little bit of pear. Spiced with cinnamon, nutmeg and a pinch of ginger. No sugar added and in a whole wheat crust that I rolled out myself. I've made pie crust in the past and it's been a mess. This time I finally got it right.

Cake!!!

Here is another cake baked today for Slight Indulgence. This one is pineapple cake with a bit of coconut. It's covered with vanilla buttercream and topped off with some toasted coconut. The smell of the coconut toasting is amazing.

Dark Chocolate Raspberry Cake

Two layers of dark chocolate cake with just a hint of raspberry. A layer of raspberry and chocolate hidden in the middle. Completely smothered with a rich chocolate ganache. This is the cake of the week available at Slight Indulgence.

Twinkies?

I like to call them cream filled vanilla cakes. Everyone else calls them Twinkies. It doesn't matter if they taste great. Mission accomplished.
